Davidson Plum Chilli Jam


  • 6 frozen davidson plums
  • 1 cup sugar
  • 1 cup water
  • 3cm ginger, diced
  • 2 cloves garlic, diced
  • 4 bullet chillies, diced



    1. Place the plums into a saucepan with the water and sugar, bring to a simmer
    2. When the plums have started to melt, place in the ginger, garlic and chilli and continue to cook, letting the plums break down
    3. When the mixture starts to thicken, add salt to taste and remove from heat. Before it cools completely, sift out the cores of the plums. Davidson plums are different from a normal plum, the cores are thin and there are multiple pieces per plum. Make sure you pull them all out!
    4. Transfer to a jar and put in the fridge. Perfectly sweet and sour chilli jam to serve with your meals! Lasts 3 weeks in the fridge in an airtight Jar
