Davidson Plum Sour

What you need


  • 50ml vodka
  • 60ml davidson plum syrup
  • 30ml lemon juice
  • 1 egg white

Davidson plum syrup

  • 100g caster sugar
  • 100g fresh or frozen Davidson plum
  • 170ml water


  1. To make the Davidson plum syrup, combine the sugar and water in a small saucepan over medium heat and stir until the sugar is dissolved. Add the Davidson plums and simmer for 10 minutes, using your wooden spoon to help break down the plums as they cook. Remove from the heat and set aside to infuse (1½ - 2 hours) then strain and refrigerate. Will keep refrigerated for up to 1 week.
  2. Place the vodka, lemon juice, egg white and Davidson plum syrup in a cocktail shaker with ice. Shake hard until the shaker becomes too cold to hold, the egg white should froth up nicely. Strain into a chilled glass and serve with a garnish of your choice!
