Ingredients
- 250g cooked prawns, peeled and diced
- 1 mango, cut into small cubes
- 1 avocado, cut into small cubes
- 1 finger lime
- 1 tbs macadamia oil (olive oil is fine)
- 1 tsp ground lemon myrtle (buy here)
- Cos lettuce
- 1/2 red onion, diced
- 2 bullet chillies, diced
- 1 tbs ground coriander
- 1/2 lime, juiced
- Salt to taste
Method
- To make the salsa, place the finger lime pearls, chilli, corriander, oil, and lime in a small bowl. Whisk until well combined and set aside
- In a larger bowl place the prawns, mango, avocado, red onion, and lemon myrtle, salt to taste. Mix until well coated
- Wash the lettuce leaves and spread them out. Serve your salad mixture into the lettuce cups evenly
- Poor a teaspoon of the salsa on top of each salad cup and then you are ready to serve!
