Finger Lime & Prawn Lettuce Cups


  • 250g cooked prawns, peeled and diced
  • 1 mango, cut into small cubes
  • 1 avocado, cut into small cubes
  • 1 finger lime
  • 1 tbs macadamia oil (olive oil is fine)
  • 1 tsp ground lemon myrtle (buy here)
  • Cos lettuce
  • 1/2 red onion, diced
  • 2 bullet chillies, diced
  • 1 tbs ground coriander
  • 1/2 lime, juiced
  • Salt to taste



  1. To make the salsa, place the finger lime pearls, chilli, corriander, oil, and lime in a small bowl. Whisk until well combined and set aside
  2. In a larger bowl place the prawns, mango, avocado, red onion, and lemon myrtle, salt to taste. Mix until well coated
  3. Wash the lettuce leaves and spread them out. Serve your salad mixture into the lettuce cups evenly
  4. Poor a teaspoon of the salsa on top of each salad cup and then you are ready to serve!
