Kakadu Plum & Macadamia Chocolate Bark

Ingredients

  • 1 block dark chocolate
  • 20g kakadu plum, sliced
  • 3/4 cup macadamia nuts, roughly chopped
  • 1 tbs desiccated coconut
  • 1 tsp ground wattleseed
  • pinch of salt

 

Method

  1. In a pan on medium heat, toast the macadamia nuts with the coconut and wattleseed. Be careful not to burn, once they start to brown remove from heat and set aside
  2. Now melt your chocolate! you can do this using a microwave, stop every 30 seconds to stir and keep going until completely melted. Or you can put a heatproof bowl over a pot of simmering water (make sure the water doesn't touch the bowl) and stir until melted
  3. Pour the melted chocolate onto a sheet of baking paper placed on a baking tray and smooth out the chocolate into a smooth and thin layer
  4. Scatter the macadamia mix and sliced kakadu plums over the chocolate. Press the larger pieces lightly into the chocolate to secure them
  5. Sprinkle with a pinch of salt (optional)
  6. Place the tray into the fridge for 30 minutes or until completely hardened then remove and crack the chocolate into small pieces of bark. It's now ready to eat! Perfect treat with a cup of tea
