Ingredients
- 1 cup rolled oats
- 2 tsp kakadu plum powder
- 2 tsp chia seeds
- 2 tbs protein powder (I use a plant based caramel flavour)
- 1 tbs liquid stevia
- 1/2 cup water
- pinch of salt
Coating
- vegan chocolate
- desiccated coconut
Method
- In a food processor or blender add all the ingredients and blend until a smooth paste. If the mixture is too wet add in another tablespoon of oats
- Take the mixture and roll them into bite sized balls. When finished, place into the fridge to set and firm
- Meanwhile put your vegan chocolate into a bowl and put in the microwave stopping every 30 seconds to stir until it is completely melted. Spread the desiccated coconut onto a plate
- Remove the balls from the fridge and coat in the melted chocolate before rolling them in the coconut and then placing them on a tray lined with baking paper. Place back in the fridge for another 30 minutes
