Kakadu Plum Protein Balls

Ingredients

  • 1 cup rolled oats
  • 2 tsp kakadu plum powder
  • 2 tsp chia seeds
  • 2 tbs protein powder (I use a plant based caramel flavour)
  • 1 tbs liquid stevia
  • 1/2 cup water
  • pinch of salt

Coating

  • vegan chocolate
  • desiccated coconut

     

    Method

    1. In a food processor or blender add all the ingredients and blend until a smooth paste. If the mixture is too wet add in another tablespoon of oats
    2. Take the mixture and roll them into bite sized balls. When finished, place into the fridge to set and firm
    3. Meanwhile put your vegan chocolate into a bowl and put in the microwave stopping every 30 seconds to stir until it is completely melted. Spread the desiccated coconut onto a plate
    4. Remove the balls from the fridge and coat in the melted chocolate before rolling them in the coconut and then placing them on a tray lined with baking paper. Place back in the fridge for another 30 minutes
