Ingredients
- 1 cup lilly pillies, deseeded
- 1/2 cup sugar
- 1 lemon
- 1 star anise
- 2 cloves
- 1 tbs chia seeds
Method
- Add the Lilly Pillies, sugar, star anise, cloves and chia seeds into a saucepan with enough water to cover the berries
- Simmer on a low heat for around an hour, if your water gets too low add a little more
- Once the consistency thickens (like syrup) use a fork to smash up any Lilly Pillies that are still whole and add the lemon juice. Simmer for another 20 minutes
- Remove from heat and let it cool down in the pan before transferring it to an airtight jar. Lasts for 4 weeks in the fridge and is perfect for your morning toast!
